What Are Hand-Pulled Noodles?

Hand-pulled noodles, also known as La Mian (拉面), are made by repeatedly folding and stretching dough into long, thin strands. This process requires years of training to perfect.

The Process

  1. Making the dough - A simple mixture of flour, water, and salt
  2. Kneading - The dough is intensively kneaded until elastic
  3. Resting - The dough must rest to develop gluten
  4. Pulling - The chef repeatedly pulls and folds the dough
  5. Cooking - The fresh noodles are cooked immediately
