  • 200g Chinese cabbage (sliced)
  • 2 eggs (soft-boiled)

Preparation

Step 1: Make the Broth (2-3 hours)

  1. Blanch the bones: Boil the bones for 5 minutes in water, discard the water and rinse the bones. This removes impurities.
  2. Build the flavor:
    • Put the clean bones in a large pot with 2 liters of fresh water
    • Add star anise, ginger, and garlic
    • Bring to a boil and simmer gently for 2-3 hours
    • Skim off the foam regularly
  3. Season:
    • Strain the broth
    • Add soy sauce, oyster sauce, and sesame oil
    • Taste and add salt if needed

Step 2: Prepare the Toppings

  1. Marinate the meat:
    • Mix the beef with 1 tbsp soy sauce and 1 tsp sesame oil
    • Let marinate for 15 minutes
  2. Cook the eggs:
    • Boil eggs for 6-7 minutes for a soft yolk
    • Peel and halve them
  3. Fry the meat:
    • Heat a wok on high heat
    • Fry the meat for 2-3 minutes until just cooked

  1. Cook the noodles according to package instructions
  2. Blanch the vegetables for 1 minute in boiling water
  3. Divide the noodles among 4 bowls
